How do junk/spam mails get the "current" timestamp applied?

Whenever I open my email client (Thunderbird), I see some junk mails that have the timestamp of the exact moment, when my client downloaded them via IMAP. So emails with the exact same timestamp of just now. I doubt I received the emails just in this moment. I am aware that spammers are able to spoof almost any information in the email header. This is how spammers can date emails with future timestamps to make them appear at the top of your mailbox.

But how do they make your client or the IMAP protocol apply the current time, when the emails are downloaded?
